Hearing:
Cats can hear higher-pitched sounds than either dogs or humans
Dogs can only hear sounds from 67 Hz to 44 kHz (9 octaves) while cats can hear sounds from 55 Hz up to 79 kHz (10.5 octaves).

Taste:
Cats have relatively few taste buds compared to humans.
Dogs mostly depend on smell, they don't have many taste buds.

Smelling:
the dog brain is dominated by an olfactory cortex.[96] The olfactory bulb in dogs is roughly forty times bigger than the olfactory bulb in humans, relative to total brain size, with 125 to 220 million smell-sensitive receptors.

Cats have an acute sense of smell, which is due in part to their well-developed olfactory bulb and also to a large surface of olfactory mucosa, in cats this mucosa is about 5.8 cm2 in area, which is about twice that of humans and only 1.7-fold less than the average dog.

So, cats have less better hearing, but they have better senses than dogs, some are a little less than dogs.

I think cats have better senses.
